I love making Keto Mug Bread. It's a quick & easy Keto-friendly bread that fills my craving for something "bread-like." It makes a great side to a keto meal or a snack. Also toasts and grills nicely for toast or a sandwich -- although its size makes more of a slider than a traditional sandwich.
But as convenient as mug bread is, I know that a lot of people aren't crazy about what they feel is its "egg-like" or "eggy" taste.
Personally, I don't mind it all, but I can see where for some people, they want it to be mug bread, and not mug "French Toast". 😁 So this recipe has not one but two ways to cut that eggy taste.
I've tweaked the recipe with a "secret ingredient" (ok, it's good old apple cider vinegar), which removes the eggy taste, and does it without making it sour or vinegar-y at all. You don't even taste the ACV.
Pro tip: stirring the egg as thoroughly as possible is also key. If you don't completely combine the white with the yolk, small bits of cooked egg white will form, which can definitely contribute an eggy taste.
So to make perfect mug bread with no eggy taste, here it is:

You can make it with many different nut flours. Many people use almond flour, but I prefer pecan flour because it had less carbs than almond flour and has higher levels of antioxidants. But I know pecan flour is harder to come by. Fortunately, Nature's Eats has a very good (and inexpensive) pecan flour on Amazon.
You can also substitute hazelnut or walnut flour for variety. Coconut flour is not recommended as it absorbs moisture differently than tree nut flours.
Many people add a tablespoon of olive oil or melted butter or ghee. I find it makes the bread a little greasy both to the touch and in mouthfeel, but as they say, your mileage and preferences may vary.
TOTAL PREP & COOKING TIME: 3 minutes.
INGREDIENTS:
2 tbsp. pecan or almond flour
1 large egg
1/4 tsp. baking powder
1/4 tsp. apple cider vinegar
pinch of salt
DIRECTIONS:
1. In a microwave-safe mug, add the egg and stir thoroughly until yolk & white are completely mixed.
2. Add nut flour, baking powder and salt.
3. Stir until ingredients are combined.
4. Microwave on HIGH for 90 seconds.
Only 2 grams net carbs!!!
